I love a recipe that’s simple enough to throw together in the middle of a busy day but still feels like a real treat. This raspberry Bakewell cake is adapted from a Fay Ripley favourite and it’s the kind of bake I often make for family or friends.

The inspiration came after our recent trip to Turkey, where the dried apricots and dates were incredible. Since coming home, I’ve been making dates drizzled with tahini and sprinkled with sea salt as a quick and indulgent snack, and that flavour combination has found its way into this recipe

My retreats are all about self-care—taking time for yourself, giving yourself a little gift—and for me, finishing with something homemade is the icing on the cake (pun absolutely intended).
