Apple Crumble Recipe

Combining my usual recipe with my yoga friend’s to create the ultimate apple crumble!

INGREDIENTS:
4 medium cooking apples, peeled, cored and quartered
25g caster sugar
1/2 tsp ground cinnamon (optional)
3 eating apples, peeled, cored and roughly chopped
For the crumble
275g plain flour (gluten free as required)
A pinch of sea salt
200g cold unsalted butter or vegan butter, cut into cubes
150g soft brown sugar
75g medium oatmeal
75g porridge oats
75g ground almonds (optional)

Preheat the oven to 180°C, grease a large baking dish.

Roughly chop the cooking apples into a saucepan and add the sugar, cinnamon and a couple of spoons of water. Bring to a simmer, cover and cook for 5 minutes or so until they have started to soften. Remove from the heat and mix in the chopped eating apples. Tip into the prepared dish and set aside.

Sift the flour and salt into a large bowl. Add the cubed butter (or vegan butter) and rub together until the mixture resembles coarse breadcrumbs.

Stir in the other dry ingredients.

Scatter the crumble over the apples in an even layer and bake in the oven for 40-45 minutes until bubbling and golden brown.

Serve hot with custard, cream or ice cream. Eat the leftovers cold for breakfast.
